Just one machine for washing and for polishing

 

The RIVA by Tristan Brandt, one of the top restaurants in Pforzheim, offers premium cuisine at the highest level – creative menus for an amazing culinary event. The award-winning chef Eduard Knecht and his team create dishes that delight guests nationwide. The top-quality ingredients for the food are procured regionally wherever possible. And you can taste it too: saltimbocca of Alb Valley veal or mille-feuille of Baden strawberries are just some of the variety of creations on the menu that are a real treat for the palate.

Every day, five permanent employees and five temps ensure that everything is to the guests' satisfaction: from the amazing food over premium service up to the gleaming cutlery. Every aspect needs to be perfect. For this reason and in keeping with their high standards, the RIVA kitchen is equipped with premium warewashing technology. This is where HOBART comes into play. Thus, the RIVA in Pforzheim is among the first restaurants in Germany to use the new generation of HOBART undercounter dishwashers with the CUTLERY PREMIUM function.

Efficient: saving costs, working time, and space
 

The optional feature means that cutlery no longer needs to be manually polished. Knives, forks and spoons come out of the machine sparklingly clean and are ready for use straight away so that your staff can focus on the guests. This enables the RIVA to save space, valuable working time and staff in their kitchen, which is very helpful in times of high operating costs and a staff shortage in the hospitality industry.

For its approx. 55 places, the RIVA needs around 350 to 400 pieces of cutlery on busy days. Before the new machine, these had to be polished manually. Restaurant manager Fabian Kisker: "We just love it! With the new feature CUTLERY PREMIUM, we save up to one and a half hour of working time per day because we can use the cutlery straight from the dishwasher. We really do not have to polish it by hand. This makes our workday much easier."

Smart: Hygienically clean cutlery with maximum flexibility
 

How does that work? By means of permanent vibration, the removable rotating cutlery rack prevents water shielding and thus ensures hygienically clean, stain-free cutlery. The optional feature is fit for flexible use: out with the cutlery rack – in with the plates rack.

Additional smart features
 

The automatic cutlery programme selection ensures easy handling. Kisker explains: "The machine is extremely user-friendly. Not only our permanent staff but also the temporary helpers understand how to operate it after a short introduction." The new generation of undercounter dishwashers includes other innovative features, such as a self-cleaning wash system, automatic self-cleaning, and the VISIOTRONIC-TOUCH control.
